This 2005 Dolcepassa is, as its name indicates, a slightly sweet dessert or after dinner wine. It was made by following the ancient method of slowly drying (up to 4 months) hand-selected clusters and laying them individually on drying racks. This concentrates their sugars and develops a complexity of aromas and flavors that can only be achieved by this very costly method. Picked in september and crushed in February the fruit lost over 35% of its weight!
Comprised of predominantly Nebbiolo and some Barbera, this ruby red wine is elegantly generous. It is loaded with aromas of ripe cherry and cherry liquor followed by complex secondary aromas of nuts, dried fruits, fig and candied orange peel. Very full and rich on the palate it has a very long finish with just enough acidity to balance its sweetness. This is a wine to have with roasted hazelnuts or gorgonzola cheese to finish a perfect meal or share with a friend in front of a slow burning fire.
